Now that our menus are created and filled out, we're ready for Galley's Production workflow. 

  1. Start on the Menus Catalog page: From the menus catalog, select all of the menus that you would like to produce at a given time. Then, select the production icon—the whisk—to navigate to the Production Module.

Customize your Production Packet: The goal of Galley's Production Module is to create production packets that save your team time and energy.  A production packet consists of a production schedule overview as well as every recipe included in that schedule. From the Production page, Galley allows you to customize your production packet output in two ways. You can filter the included recipes by category value or you can group recipes by menu or concept.

Grouping the packet: In the example, we can see the production packet output will be filtered to only the recipes that need to be made in the 'Sides' Prep Station, and the included recipes will be grouped by the 'Concept'. If a recipe is included in multiple concepts (or menus), grouping the packet will make the recipe appear multiple times, with the associated volume for each concept or menu.

  4. Show sub recipes: The production list can also be customized with the Show Sub-Recipes and Round Required options. Show Sub-Recipes dictates whether the production list will only contain the menu items or if it will include the sub-recipes of the menu items as well. Round Required, on the other hand, will round all production quantities to the nearest whole number when enabled.

  5. Print: Once you set any filters or groupings you want to apply, click "Print All" to generate the production packet.

  6. Overview: The first page of the packet will have an overview of the production schedule, with all the recipes that will need to be produced. If you chose to group by concept or menu, you will be able to see every recipe's contribution and total quantity for each concept or menu.

  7. Share with your team: After the production overview, you will find each recipe scaled to the volume set in the given menu(s). Additionally, all sub-recipes that are shared by multiple parent recipes will be automatically batched and shown at their total volume. The production packet also provides the same export settings that can be found in Recipe Packets. Some customizations you can make include choosing the fields displayed, setting one system or kind of unit to use across all recipes, or even removing page breaks between sub-recipes. Make any adjustments and you are ready to share the production packet with your team!
