How to decrement finished goods from inventory based on menu items

Fulfill menus and maintain inventory accuracy.

Decrement (decrease) the inventory of finished goods by using the Volume Sold field on the Menu's page (see screenshot below).



Inventory movement may vary depending on previous production runs and the on-hand amount of finished goods associated with each recipe.

Note: If you are not using the Production Planner module, by filling in the Volume Sold field, Galley will decrement the inventory of vendor items associated with the ingredients of each recipe.

Note: If you are using the Production Planner module, by filling in the Volume Sold field on the Menu, Galley will decrement the finished goods on-hand amount.

Here is how inventory decrements can occur:

  1. If the recipe has never been produced, and the user inputs Volume Sold.
    • Galley shows an error message and does not decrement inventory.
  2. If the recipe has had other production runs, and the user inputs Volume Sold equal to what is on-hand.
    • Galley will decrement the most recently produced finished good from that recipe for the Menu's Location.
  3. If the recipe has had other production runs, and the user inputs Volume Sold higher than what is on-hand.
    • Galley will decrement the most recently produced finished good from that recipe for the Menu's Location, then it will decrement the previous finished good produced on the previous production run, until it reaches the Volume Sold input value.
  4. If the recipe has had other production runs, but there is 0 quantity on hand, and the user inputs a Volume Sold quantity.
    • Galley will allow the inventory to go negative.

WARNING: If a user inputs a Volume Sold quantity that is higher than the volume produced for a given menu item and then changes the Volume Sold to a number lower than the volume produced, Galley does not undo the inventory movements!
